Dillas Quesadillas was founded by Kyle Gordon; he dreamed up the concept as an undergraduate at the University of Texas, where he ate quesadillas nearly every day. With the name inspired by a scene in the movie Napoleon Dynamite, and the fare reminiscent of the owner’s favorite college snack, Dillas has a distinctive, fun, young vibe, with a new take on fast casual dining. It’s a great lunch pick and a crowd-pleaser!

Kyle and his wife, Maggie, began dating in college when Kyle thought of his concept. They sketched out floor plans, came up with menu ideas, and daydreamed together. When Kyle graduated, he knew that experience in the industry was a must before he could successfully run a business. After 7 years he was a managing partner in a similar restaurant, and he felt confident enough to branch out on his own. Maggie had experience in marketing, and shines as the head of office operations, wearing many hats, from HR to advertising.
Dillas offers an American take on the classic Mexican favorite, the quesadilla, with fillings such as buffalo chicken and bacon, and smoked pulled pork and brisket. They also have delicious sides like fries, cilantro lime black beans, pralines, and corn salad. With a convenient drive-thru and catering options, this fast fare is a winning combination of local and unique. With enough business, Kyle hopes to open a second restaurant, and from the look of it, he will have the opportunity. The local community has taken to his vision, and it’s a popular place to stop by or drive-thru.
